Sausage Tortellini Soup

This cozy, hearty soup is a staple in our house all year long. It's so easy and absolutely DELISH! It freezes well too, so you can keep it for leftovers without issues. I recommend serving it with crispy French bread.

The amount below will be enough for a family of 6 or plenty of leftovers you can freeze. For a smaller batch, skip the tomato soup, use only 16oz of chicken broth and one can diced tomato.


Ingredients

• One pack of cheese or herb tortellini

• Baby spinach

• 2 cans of diced tomatoes

• 1 can tomato soup

• 32oz of chicken broth

• Mild Sausage ( I use the tubed breakfast or Italian sausage)

• Minced or chopped Garlic and onion

• Garlic powder, Italian seasoning, salt and pepper

• One pack cream cheese

• Shredded Parmesan


In a medium skillet, brown your sausage with garlic powder, Italian seasoning and salt and pepper. Add in your yellow onion and minced garlic.


Add to your crockpot and add chicken broth, and tomato products. Set on low for 6 hours on high for 4 hours. 30 min before serving, add the tortellini, spinach and cream cheese. Before serving, stir well. Top with shaved parmesan and enjoy with crispy French bread!
